Blackberry Balsamic Chicken


1 tablespoon, il Fustino extra virgin olive oil
1/2 medium, red onion - chopped
salt and pepper
1/2 teaspoon, dried thyme
6 boneless skinless chicken breast halves
1/2 cup, il Fustino Blackberry Balsamic vinegar


  1. Heat olive oil in a large skillet, add onions and saute until translucent
  2. Season chicken halves with salt, pepper and thyme
  3. Add chicken to skillet and saute approximately 6 minutes per side or until golden and juices run clearly
  4. Remove chicken from skillet and keep warm
  5. Add Blackberry Balsamic vinegar to skillet and season to taste with salt and pepper, stirring constantly
  6. Bring sauce to a very gentle boil
  7. Plate chicken and spoon sauce over chicken to serve
