Bruschetta

Grilled Italian Bread

Serves: 4

Ingredients

  • 8 slices, Italian bread (a day or more old is better) - sliced 3/4" thick
  • 2 cloves, garlic - peeled and slightly crushed to release oils
  • kosher salt
  • 1 roma tomato - seeded and finely chopped
  • extra virgin olive oil

Method

  1. You may prepare this over a grill, or under a broiler, but the best way is to use a grill pan. It gives you the most control over the grilling process and produces the most consistent results
  2. Place tomatoes in a strainer and press down on them to release most of the juice and let them drain
  3. Heat a grill pan over medium high heat
  4. Rub peeled and slightly crushed garlic over the surface and crust of the bread pieces
  5. Drizzle olive oil lightly over the bread
  6. Sprinkle lightly with salt
  7. Place on heated grill pan, under the broiler, or on top of grill, oiled side up. Heat will allow the oil to penetrate the bread, which is what you want to happen
  8. Grill until lightly brown
  9. Flip bread over drizzle more oil and add a bit more salt
  10. Grill until lightly brown on both sides
  11. Top with drained tomatoes

Less is more here. The flavor is in the bread not so much in the topping. Of course you can add additional toppings such as finely chopped basil, grated Parmesan cheese, etc. but be careful that you do not make the bread soggy.
