Italian Sausage with Onions and Green Peppers
Boston's Haymarket is redolent with the smell of this delicious and simple recipe
Serves: 4
Ingredients
- 6 Italian sausage links

Sweet or Hot (your choice)
- 2 medium,
onions
-
sliced
- 4 green peppers
-
seeded and sliced
- 1/4 extra virgin olive oil
- salt and pepper
- 1 16 ounce can,
chicken broth

(optional)
- 1 tablespoon,
flour
-
(optional)
- 1/4 cup,
grated parmesan cheese

Method

Over medium heat, in a large non-stick frying pan, fry sausage links until brown

Add peppers and onions, a pinch or two of salt and a grind or two of black pepper

Cook until onions are wilted and slightly brown

You can stop here and serve these on sliced hot dog buns or you can make a delicious pasta sauce

For pasta sauce:

Remove sausages and slice into 1 inch sections.

Add flour to pan and cook for 2 or 3 minutes

Add chicken broth and stir until thickened
-
Return sausage pieces and reheat

Serve over spaghetti or linguine

Top with parmesan cheese
