Serves: 4

Italian Sausage with Onions and Green Peppers


6 Italian sausage links - Sweet or Hot (your choice)
2 medium, onions - sliced
4 green peppers - seeded and sliced
1/4 extra virgin olive oil
salt and pepper
1 16 ounce can, chicken broth - (optional)
1 tablespoon, flour - (optional)
1/4 cup, grated parmesan cheese


  1. Over medium heat, in a large non-stick frying pan, fry sausage links until brown
  2. Add peppers and onions, a pinch or two of salt and a grind or two of black pepper
  3. Cook until onions are wilted and slightly brown
  4. You can stop here and serve these on sliced hot dog buns or you can make a delicious pasta sauce
  5. For pasta sauce:
  6. Remove sausages and slice into 1 inch sections.
  7. Add flour to pan and cook for 2 or 3 minutes
  8. Add chicken broth and stir until thickened
  9. Return sausage pieces and reheat
  10. Serve over spaghetti or linguine
  11. Top with parmesan cheese
