Alubia Blanca Beans Two Ways with Olio Nuovo

White Bean Bruschetta
Ingredients:
  • 4 slices, sourdough bread - toasted
  • 2 cups cooked white beans (Alubia Blanca or similar)
  • 2 tbsp, il Fustino EVOO
  • 4-6, fresh sage leaves
  • 2, garlic cloves - 1 clove minced and leave the other whole for rubbing on toasted bread
  • il Fustino Olio Nuovo Extra Virgin Olive Oil
  • flaky salt

Directions:

Heat up the olive oil in a saucepan over medium heat.
When hot, add your sage leaves and let them crisp, about 30 seconds, then add your minced garlic and cook for another 30 seconds.
Reduce heat to low heat and add your beans. Let the beans warm up for 5 minutes. Lightly mash your bean and sage mixture with a fork and set aside.
Toast your bread. While the bread is still warm, immediately rub garlic clove over each bread slice. Top bread with beans and drizzle with Olio Nuovo Extra virgin Olive Oil.
Finish with flaky salt and enjoy!
