Butter Bean Salad

Ingredients:

  • 1 clove, garlic - minced
  • 1 tbsp, parsley - finely chopped
  • 1/2 tbsp, mint - finely chopped
  • juice of 1/2 a lemon
  • 1/4 cup, green onions
  • 1 tbsp, il Fustino Spanish Sherry 
  • 1 tbsp, Dijon mustard
  • 1/2 tbsp, honey
  • 3 tbsp, il Fustino Miller's Reserve Extra Virgin Olive Oil
  • pinch of salt
  • pepper - to taste
  • 1 can, Butter Beans - rinsed and drained

Directions:

Start by mincing 1 clove of garlic, finely chopping the parsley and mint and thinly slicing the green onions.

To a mixing bowl, add the minced garlic, prepped tender herbs, lemon juice, sherry vinegar, Dijon mustard, honey and olive oil. Whisk to combine and season with salt and pepper to taste.

Add the rinsed and drained butter beans into the mixing bowl and toss to coat evenly with the herby sauce.
