Fettunta with Whipped Ricotta

Ingredients:

  • 1 cup, whole milk ricotta
  • 1/4 cup, creme fraiche
  • 1 tbsp, il Fustino Olio Nuovo Unfiltered Extra Virgin Olive Oil + more for garnishing
  • 1/2 tsp, kosher salt
  • 4, slices of sourdough - toasted

Directions:

In a skillet, heat a tablespoon of butter and add the sliced bread until golden brown on both sides.

In a food processor, combine the ricotta, creme fraiche, a tablespoon of Olio Nuovo together until smooth and airy about 3 minutes.

For an eye-catching presentation, pipe the whipped ricotta onto the toasts. Or you can simply spoon some of the ricotta mixture onto each toast. To serve, drizzle with a hearty pour of Olio Nuovo and season with a pinch of salt and freshly ground pepper.
