Grilled Radicchio with Zesty Tomato Vinaigrette

Ingredients:

For the vinaigrette:

  • 1 clove, garlic
  • 2 cups, fresh chopped tomatoes
  • 1/2 cup, il Fustino Italian Varietals EVOO
  • 1/3 cup, il Fustino Tomato Balsamic
  • 1 1/2 tsp, kosher salt 
  • dash of ground cayenne - optional
  • 1 head of radicchio - quartered

For the radicchio:

  • 1/4 cup, il Fustino Italian Varietals EVOO
  • 1/2 tsp, kosher salt
  • Parsley - to garnish

Directions:

Add garlic clove and the chopped tomatoes to a blender, blend for 30 seconds until smooth. Then add the olive oil, balsamic and seasonings, blend for 15 seconds.

Transfer to a jar and refrigerate until ready to use.

For the radicchio: heat a grill pan over medium heat. Toss the radicchio quarters in the oil to coat and season with a pinch of salt.

Grill radicchio for 7 minutes, turning occasionally to char all side until slightly wilted.

Remove radicchio from heat and lay on a serving platter, top with some of the tomato vinaigrette and garnish with a sprinkle of chopped parsley. Enjoy!
