Pineapple Cake

A cake simple and fun to make. The recipe is always requested when I bring it to a gathering. I am including the recipe for cream cheese frosting but all you need is a dusting of powdered sugar.
Ingredients:
CAKE
- 2 cups, flour
- 2 eggs
- 1 teaspoon, vanilla
- 2 cups, sugar
- 2 teaspoons, baking soda
- 1 20 oz, can crushed pineapple with juice
FROSTING
- 1/2 cup, butter – softened
- 1 1/2 cups, powdered sugar
- 1 8 oz, cream cheese
OPTIONAL
- 1 cup, pecans – chopped finely and lightly toasted over medium heat
Directions:
Preheat oven to 350 degrees. Prepare a greased & floured 9 X 13 inch cake pan
Mix all of the cake ingredients together in a large bowl. Either use a hand mixer or beat by hand until well blended
Bake for 40 to 45 minutes, until tooth pick comes out clean
Cool 30 minutes
Either frost cake or liberally sprinkle with powdered sugar
Optionally, sprinkle the top with pecans.
