Roasted Pepper & Tomato Crostini
Ingredients:
- 1 package, Poshi Flame Roasted Red Peppers - reserve oil
- 1, handful of fresh basil
- 1 cup, cherry tomatoes - chopped
- 3, garlic cloves - minced
- 3/4 cup, bocconcini
- 3 tbsp, il Fustino Arbequina EVOO
- salt and pepper - to taste
- toasted baguette
- il Fustino 25 Barrel Aged Balsamic Vinegar for drizzling
Directions:
Remove peppers from package and save the oil. Slice the red peppers and place in a mixing bowl.
Thinly slice the fresh basil and add to the mixing bowl along with the cherry tomatoes, minced garlic and drained bocconcini.
Drizzle with EVOO, balsamic, and reserved pepper oil, then season with salt and pepper to taste.
Serve over toasted baguette slices and enjoy!
