Roasted Plums with Cardamom Cream

Roasted Plums with Cardamom Cream

Ingredients:

  • 4, plums - cut in half and pits removed
  • 3 tbsp, juice from an orange
  • 1 tbsp, sugar
  • 1 tbsp, il Fustino Casa Rangoni White Balsamic
  • 1 tsp, sumac
  • 1/2 tsp, ground cardamom
  • il Fustino Blood Orange Olive Oil for drizzling optional 

For the cream:

  • 1 cup, heavy whipping cream
  • 1 tbsp, light agave nectar
  • 1 tsp, vanilla extract
  • 1/2 tsp, ground cardamom

Directions:

Preheat oven to 400 degrees Fahrenheit.

Place cut plums cut side up on a parchment lined baking sheet.

Take small pinches of sugar and dust the top of each plum. 

Carefully drizzle each sugar topped plum with a bite of orange juice and white balsamic. Season each with a bit of sumac and ground cardamom.

Roast for 15 - 20 minutes or until top is well caramelized.

While plums cool, make the cream: Whip together the heavy whipping cream, agave nectar, vanilla extract and ground cardamom until stiff peaks form.

Top each plum with a large dollop of cardamom cream and a delicate drizzle of Blood Orange Olive Oil and enjoy!
