Romesco Sauce
Ingredients:
- 1 package, Flame Roasted Red Peppers (4.4 oz) - drained
- 1/2 cup, cherry tomatoes
- 1/3 cup, sliced almonds - toasted
- 2 tbsp, parsley
- 1 clove, garlic
- 2 tbsp, il Fustino Spanish Sherry Vinegar
- salt & pepper - to taste
- pinch of red chili flakes - optional
- 1/2 cup, il Fustino Miller's Reserve Extra Virgin Olive Oil
Directions:
Start by toasting sliced almonds in a dry pan over medium heat until almonds are golden brown and fragrant, about 3 minutes. Let cool slightly before moving on.
To a food processor, add the drained flame roasted peppers, cherry tomatoes, toasted sliced almonds, parsley, garlic and sherry vinegar. Pulse until smooth, taste and season with salt, pepper and red chili flakes (if using).
Once the mixture is smooth, keep the food processor running and slowly pour the olive oil in, continue mixing until the oil is completely incorporated.
Use as a sauce for roasted vegetables, grilled meats and butter beans!
