
Chicken with Caramelized Onion & Cherry Balsamic Sauce
Ingredients:
For the chicken:
- 2-4 chicken breasts (about 8 ounces each)
- salt & pepper
- EVOO
For the sauce:
- 1 tbsp, il Fustino Basil Olive Oil
- 1/2, small sweet onion
- 1/4 cup, vegetable broth
- 1/4 cup, il Fustino Cherry Balsamic Vinegar
- 1 tsp, salt
- 1/2 tsp, freshly ground black pepper
- 1 tbsp, all-purpose flour
- 1 tbsp, butter
Directions:
Preheat your over to 450 degrees Fahrenheit. Prepare a foil-lined baking sheet, set aside.
Season chicken breast with salt, pepper and a drizzle of evoo. Make sure to season both sides of each chicken breast. Bake in preheated oven for 15 - 18 minutes or until cooked through.
While chicken is baking, heat a medium skillet over medium-high heat. Once heated, add 1 tbsp basil olive oil and thinly sliced onions. Once the onions are fragrant, reduce the heat to medium-low and let the onions soften and begin to caramelize. This should take 7-10 minutes.
Now add the vegetable broth, cherry balsamic, salt and pepper to the skillet, stir to combine and let come to a simmer. Stirring regularly, let the sauce simmer until thickened slightly, about 5 minutes. Now add the flour and whisk until incorporated, reduce heat to low and let cook for another 3-5 minutes until sauce reached your desired thickness. Remove sauce from heat and add butter stirring until the butter melts into the sauce and set aside until ready to serve.
Slice the chicken and pour a few spoonfuls of the balsamic sauce over the top to serve.
