
Peach & Blueberry Salad with Cherry Balsamic Vinaigrette
Ingredients:
For the salad:
- 6 ounces, arugula
- 2 medium peaches - pitted and thinly sliced
- 1/2 cup, sliced almonds
- 1/2 cup, feta cheese - crumbled
- 1/3 cup, blueberries
For the dressing:
- 1/3 cup, il Fustino Basil Olive Oil
- 2 tbsp, il Fustino Cherry Balsamic
- 1 tsp, honey
- salt & pepper - to taste
Directions:
Wash the arugula and pat dry. Place the washed arugula into a salad bowl and top with sliced nectarines, sliced almonds and blueberries. Crumble the feta over the top of the salad and set aside.
In a small bowl, whisk together the basil olive oil, cherry balsamic and honey. Season with salt and pepper to taste. Once the dressing comes together pour over the salad and serve immediately.
