Peach & Goat Cheese Toast with Cherry Balsamic and Basil Oil

Ingredients:

  • 1, white peach - pitted and thinly sliced
  • 2 tbsp, il Fustino Basil Olive Oil
  • salt & pepper
  • 6 ounces, goat cheese
  • 1, ciabatta roll
  • il Fustino Cherry Balsamic Vinegar
  • Basil leaves - to garnish
  • flaky salt

Directions:

Slice the ciabatta in half and toast until golden brown.

Place the sliced peaches in a bowl, drizzle the basil olive oil over the peaches with a pinch of salt and pepper. Lightly massage the peaches until they are coated and seasoned.

Once the ciabatta is toasted, spread the goat cheese over each slice and top with the marinated peach slices. Garnish with a few basil leaves and finish with a drizzle of cherry balsamic and a pinch of flaky salt.
