Frittata with Ham, Brie, Grain Mustard & Pickle Garnish
Ingredients:
- 1 tbsp, il Fustino Mission Extra Virgin Olive Oil
- 1 small white onion - thinly sliced
- 7, eggs
- 1/2 cup, heavy cream
- 1 tbsp, wholegrain mustard
- 4 slices, high quality ham - torn
- wedge of brie, cut into slices (about 5 ounce)
- salt and pepper
- cornichons
Directions:
Preheat oven to 400 degrees Fahrenheit.
Heat oil in a large frying pan over medium-low heat. Add sliced onion and a pinch of salt and pepper and cook until onion is soft, about 10 minutes. Transfer cooked onions to a bowl and let cool slightly.
In a large bowl, whisk together the cooled onions, eggs, cream and mustard. Season with salt and pepper.
Pour into a 10-12 inch oven proof skillet. Place the torn ham pieces and slices of brie over the top.
Cook in preheated oven for 12-15 minutes or until set and edges are golden brown.
Serve each slice of frittata topped with a cornichon and enjoy!
