
Italian Butter Bean Herby Salad
Ingredients:
- 1 can, butter beans
- 1/3 cup, quartered artichoke hearts - chopped
- 1/4 cup, flat-leaf parsley, chopped
- 1, lemon - juiced
For the dressing:
- 3 tbsp, il Fustino Casa Rangoni White Balsamic
- 3 tbsp, il Fustino Santa Barbara Estate Blend EVOO
- 1 tbsp, il Fustino Basil Olive Oil
- 1/2 tsp, sea salt
- pepper - to taste
- 1 clove, garlic - minced
- 2 tbsp, Dijon mustard
Directions:
Into a bowl, add the drained and rinsed butter beans, chopped artichoke hearts and parsley leaves. Top with lemon juice and stir together.
Make the dressing: Whisk together the balsamic, olive oil, salt, pepper, minced garlic and mustard. Pour over the butter bean mixture.
