Italian Butter Bean Herby Salad

Ingredients:

  • 1 can, butter beans
  • 1/3 cup, quartered artichoke hearts - chopped
  • 1/4 cup, flat-leaf parsley, chopped
  • 1, lemon - juiced

For the dressing:

  • 3 tbsp, il Fustino Casa Rangoni White Balsamic
  • 3 tbsp, il Fustino Santa Barbara Estate Blend EVOO
  • 1 tbsp, il Fustino Basil Olive Oil 
  • 1/2 tsp, sea salt
  • pepper - to taste
  • 1 clove, garlic - minced
  • 2 tbsp, Dijon mustard

Directions:

Into a bowl, add the drained and rinsed butter beans, chopped artichoke hearts and parsley leaves. Top with lemon juice and stir together.

Make the dressing: Whisk together the balsamic, olive oil, salt, pepper, minced garlic and mustard. Pour over the butter bean mixture.
