Mediterranean Chicken & Potatoes

Ingredients:

  • 1.5 pounds, chicken thighs
  • 1 tbsp, il Fustino Mediterranean Roasting Rub
  • 2-3, dutch potatoes - cubed
  • 1, sweet potato - cubed
  • 1/2, small onion
  • 2 cloves, garlic - minced
  • juice of 2 lemons - about 1/4 cup
  • 1/3 cup, il Fustino Santa Ynez Blend EVOO
  • 1 tbsp, dried oregano
  • salt and pepper - to taste
  • 1/3 cup, water

Directions:

Preheat oven to 350 degrees Fahrenheit.

In a baking dish, arrange the chicken thighs, then the cubed potatoes and sliced onions around the chicken thighs to fill the remaining space.

Make the marinade by whisking together the following ingredients in a small bowl: minced garlic, lemon juice, EVOO, il Fustino Mediterranean Roasting Rub, dried oregano, water, salt and pepper. Pour marinade over the chicken and potatoes.

Cover the baking dish with foil and bake in the preheated oven for 1 hour 30 minutes. Uncover and spoon the remaining juices over the rest of the ingredients, return to oven and continue baking until the chicken and potatoes are golden brown and cooked through.
