Penne alla Mamma Maria (Miracle Passata Sauce)

Ingredients:
- 12 oz, Pasta Santina Penne
- 20 oz (700 mL), Passata
- 3 cloves, garlic
- 3 sprigs, basil
- 10 oz, cherry tomatoes
- 1/2 cup, il Fustino Arbequina Extra Virgin Olive Oil
- 4 oz, Parmesan - grated
- salt and pepper - to taste
- red chili flakes - optional, to taste
Directions:
Make ahead
Marinated your cherry tomatoes, the earlier the better, cut in half and mix in a bowl with EVOO, Salt Pepper, Basil and the magic begin, for at least 20 minutes
Cooking
Add EVOO into a pot and bring to medium heat.
Add three hand-crushed garlic cloves, and chili flakes (if using).
Cook garlic until golden, then remove it and discard, add your tomato passata and 2 basil sprigs, cover with a lid and let it cook for ten minutes. This will cook your sauce enough and carry a nice bright, not too dense flavor!
Time to cook some pasta, Penne. Add a second pot with 3qt of hot water, add 1 oz of sea salt, once it is boiling add Penne and cook for 6 minutes.
After 6 minutes, strain the water and pour pasta into the passata pot, stir with a spoon until nice and cozy, and let cook for another minute all together add cooking water if necessary.
Grated Parmesan cheese .
Serve pasta on a plate and top it with your magical cherry tomato salad, add a bit more of freshly grated cheese and enjoy. Oh yes, it is great!
