Tagliolini al Limone
Ingredients:
- 1/4 cup, salted butter - divided into tablespoons
- 1, shallot
- 1 tbsp, il Fustino Lemon Olive Oil
- 1 sprig, basil
- 250 gram, il Fustino Tagliolini
- 3 slices, lemon peel
- 1 ounce, lemon juice (juice from half a lemon)
- 1 tbsp, finely chopped tender herbs - We used fresh chives, basil & mint
- 1/2 cup, grated Parmesan
Directions:
Start by bringing a large pot of salted water to a boil. Cook pasta until just before al dente and drain, reserving 1/3 cup of the pasta water.
While pasta is cooking melt butter in a skillet over medium high heat. When the butter is melted add the diced shallot, season with a pinch of salt and cook until they begin to become translucent, about 5 minutes. Add lemon juice, lemon peel and full sprig of basil, stir to incorporate. Add reserved pasta water and let cook down for 3 minutes.
Add drained pasta and toss to coat. Season with chopped herbs.
Now add 1/2 cup of freshly grated parmesan. Using tongs, continue to toss until parmesan is incorporated into the sauce.
Remove sprig of basil and lemon peel before serving and enjoy!
