Sundried Vegetable Pesto


Olive oil, sundried eggplant, sundried zucchini, sundried tomatoes, onion, pitted "Leccina" olives, capers, extra virgin olive oil, unrefined seasalt, apple vinegar, lemon-juice.

Pour over thick tomato slices, top with parmesan cheese and bake until tomatoes are soft and cheese is golden brown.
