Baked BBQ Chicken
Ingredients:
- 4 cups, water - warm
- 1/4 cup, kosher salt
- 2, chicken breasts
- 1 tbsp, il Fustino Vinegar BBQ Rub
- salt and pepper
- 2 tbsp, il Fustino Arbequina EVOO
Directions:
Preheat the oven to 450 degrees Fahrenheit.
Wile the oven is preheating, brine your chicken: In a large bowl, whisk together 4 cups of warm water and the kosher salt, until the salt is dissolved. Place your chicken in the brine and let sit for 20 minutes. This will help keep your chicken tender and juicy while baking.
After 20 minutes, remove the chicken from the brine and pat dry. Place into a glass baking dish.
Season the chicken with the Vinegar BBQ Rub and a pinch of salt and pepper.
Drizzle with EVOO and rub the seasonings on to both sides of each chicken breast.
Bake in preheated oven for 15-18 minutes or until the chicken is cooked through and the internal temperature reads 165 degrees.
Let rest for 15 minutes until slicing.
