
Farmer's Market Greens with Thyme Vinaigrette
Ingredients:
For the salad:
- 1/2 pound, spring mix
- 2 tbsp, preserved lemon - minced
- 2 tbsp, candied ginger - chopped
- small handful of basil leaves - about 6
- 2 ounce, Parmesan cheese - shaved
For the vinaigrette:
- 2 tbsp, il Fustino Champagne White Balsamic Vinegar
- 2 tbsp, il Fustino Lambrusco Wine Vinegar
- 1/2 cup, il Fustino Herbes de Provence Olive Oil
- 3/4 tsp, salt
- 1/2 tbsp, thyme leaves
- 2 tbsp, parsley - chopped
Directions:
In a large salad bowl combine the spring mix, preserved lemons, candied ginger, sliced basil and shaved Parmesan. Set aside.
For the dressing: Combine all the vinaigrette ingredients in a blender and pulse until the dressing comes together and the oil is emulsified.
Pour dressing over the salad and toss to coat.
