Herbes de Provence Yogurt Cake

Ingredients:

  • 1/2 cup, yogurt
  • 1 1/2 cups, flour
  • 1 cup, sugar
  • 1/2 cup, il Fustino Herbes de Provence Olive Oil
  • 3 eggs
  • 1 tbsp, baking powder
  • 1 tsp, vanilla extract
  • zest of 1 lemon
  • 1/2 tsp, salt
  • powdered sugar

Directions:

Preheat oven to 350 degrees Fahrenheit.

In a large mixing bowl combine the sugar and lemon zest and use your fingers to rub the lemon zest into the sugar until it is fragrant and mixed through.

Add in the yogurt, sugar, olive oil, eggs and vanilla extract and whisk to incorporate.

Add the flour, baking powder and salt. Whisk until just combined, try not to over mix to avoid a dense cake.

Pour into a greased spring form pan and bake in the preheated oven for 35 minutes or until cake is cooked through.

Once cooked, remove from oven and let cool. Once the cake is cooked dust the powdered sugar over the top and serve.
