Strawberry & Ancho Relish
Ingredients:
- 1 pound, strawberries - hulled and chopped
- 1/2 cup, sugar
- 1/4 cup, il Fustino Roasted Ancho Pepper Vinegar
- 1/2 tsp, salt
- 1/4 cup, water - as needed
Directions:
To a saucepan, add the chopped strawberries, sugar, vinegar and salt.
Bring to a boil, then lower to a simmer over low-medium heat. Let simmer for 30 - 45 minutes, until the relish thickens to your desired texture. Stir every few minutes to prevent sticking - if the relish begins to stick, lower the heat.
If the relish becomes too thick, you can add water 1 tablespoon at a time to thin it out.
Enjoy over cheeses, your favorite protein or spread on toast!
