Tian Provençal with Herbes de Provence Olive Oil

Ingredients:

  • 1 jar, Carciofi Artichoke Tomato Sauce, 12.35 oz
  • 1 small, onion - sliced
  • 1 tsp, il Fustino Sherry Vinegar
  • 1 tsp, dried thyme
  • 2, zucchini
  • 1, large eggplant or 2, Chinese eggplants (for more uniform slices)
  • salt and pepper
  • 1/4 cup, il Fustino Herbes de Provence Olive Oil

Directions:

Preheat the oven to 375 degrees Fahrenheit.

Over medium heat saute the sliced onion until lightly caramelized, about 7 minutes.

Pour the tomato sauce into the bottom of your tart pan, top with caramelized onion.

Slice the zucchini, eggplant and tomatoes into 1/4 inch thick slices. Arrange in a spiral pattern on top of the tomato sauce. 

Top with the olive oil and a pinch of salt and pepper.

Cover with foil and bake in preheated oven for 40 -45 minutes, removing the foil for the last 15 minutes to allow the vegetables to become golden on top.
